Picking Peas

I am growing Allsweet Peas for the first time with much success. I got the seeds from the US. My plants are about 3 in tall and fruiting already. How do I know when to pick them? Do we eat the whole pea as in snowpeas or do we shell them for the pods?How are the rest of your gardens doing? Anyone out there had a really great year?
