Last year I grew button mushrooms from a Redi-Gro kit.  The first batch I
forgot to pick, and the mushrooms were completely 'open', but we ate them
anyway.  You cannot imagine how delicious they were; much richer in taste
than the usual button.  We let all subsequent mushrooms open fully before
picking.
