Here is a list of my favorite few varieties for each.  If you want to try
again you may want to try these:
Beets-   Early Wonder, Solo (new monogerm type), Action, and Pacemaker II
Carrots-  Ivanhoe, Avenger, Navaho, Apache, and Six-Pak
Radishes-   Champion is one of my favorites, also Altaglobe, and Cabernet 
Corn  is a little more complicated, there are a lot of new varieties out
and its very difficult to decide what to try.  On our farm sweetcorn is a
major crop, so we can justify trialing many varieties.  For our market
bi-color corn is wanted at least 20 to 1 so we don't grow very much all
yellow (though there are some really great tasting yellows)
In the early season my best bi-colors are Temptation and Ivanhoe.  My main
season favorites are Lancelot and Table Treat.   There aren't any varieties
that I've tried that even come close to the eating quality of these four.  
If it means anything to you, these four varieties comprise at least 75% of
our acreage of freshmarket sweetcorn.  
I'm not much of a soil scientist so I wouldn't be of any help with your
soil problems (if they are the factor)    Maybe someone else could help you
on that end, and combined with some good varieties you'll have the best
garden.
