Re: slimy okra


Hey,

In defense of Okra...It is slimy if boiled ..and I can't say I like it cooked
that way.
The way I cook mine and most folks growing up in the South do is deep fry or
pan fry.
slice the okracross-wise in thin slices, mix some cornmeal and flour
togeather, coat all the okra with this including black pepper and salt. Drop
in deep fryer of hot oil and cook as you would french fries or put in a frying
pan with several inches of hot cooking oil and brown turning until both sides
are nicely brown or crisp, if you perfer.
Drain on paper towel. Serve with other vegetables, like peas, string beans
etc. 
Also, when washing the Okra, and cutting the ends off in prepration for frying
be sure not to drop the ends back into your  water nor the Okra pod after you
cut into it, this will make your Okra slimy, then again a little *slimy* will
help hold the flour and cornmeal on better.
Just one of my Southern recipes....( and I do like that fried Okra!)
