In the days before domestic freezers we used to peel, core and cut up
apples into rings, plunge into salty water to stop them going too brown,
and thread onto canes which went across the gas oven which was left at
its lowest setting overnight with the door just open.
You can use camden tablets (SO2) instead of salt to bleach them, as long
as you cook the apples eventually (who wouldn't?).
It's worth knowing these old techniques in case we find ousrselves one
day without all our modern gadgets.
