Cauliflower is a cool weather crop. I never had any luck with it, either,
until I made it a fall crop, to come into maturity about the time of the
first frosts. Then I got snow white heads that were crisp and sweet, with
little pest pressure. Of course you have to blanch the heads, unless you have
a self blanching variety.
If it comes off during the heat of summer, it's really an uphill fight.
