I have grown several varieties of cauliflower and one that I like most for
flavor and tenderness has a natural pinkish-purplish color tingeing the white
(dont remember its name at the moment). This doesnt distract from the
flavor. If you dont find this appealing, make sure you grow a variety that
claims to have solid white heads. I never blanch my cauliflower.
