picking peppers

Hi,
I'm growing habanero and serrano peppers, and am
not sure when to
pick them. They're all still green and I've often seen them in stores
(at least I've seen the habaneros) orange or red. I was wondering if I
should let them stay on the plant and get that color or if I should pick them now while they're green. Is there a difference in the flavor if I do one over the other? Will they turn different colors? How do I know if they're ripe? (this is all very new to me, and I'm very excited that they've grown on my watch and want to be able to use them eventually).
