My personal experience...
Habaneros are best if allowed to ripen to orange so the fruity
flavor the habanero is well known for has time to develop.
Serranos can be harvested and used while still green, but I like
to leave some on the plants to ripen to red for harvest at the
end of the season...sweeter and richer flavor, IMHO.
