It's one of those "it depends" things. Some cucumber varieties produce
both male and female flowers, and require pollination. Some cucumber
varieties produce only female flowers, and don't require pollination. 
The term for that is parthenocarpic, if I read my Johnny's catalog 
correctly. Some cucumbers produce all female flowers and _do_ require
pollination, so you have to plant a variety with male flowers in order to
get pollination. Again reading Johnny's, I believe that the term for 
those is gynoecious.

So you have a lot of ways of getting cucumbers. The only way of not
getting cucumbers is to plant a gynoecious variety without planting
a pollinator. Guess what I did last year? :)
