I've never grown them, last years seeds never sprouted, but I would guess
that you wait until the pod has dried, turning tan or brown. If you open the
pod up, you'd find the seeds nearly dry naturally. What I don't know about
the pods is whether they will open on their own and shoot the seeds out or
just stay attached to the pod. Watch them carefully.

Our sesame plants have green seed pods on them now. When and how do we
harvest them in order to have dried, unhulled sesame sees as an end product.
