Re:leeks and Straw


Janet --

To get a long white stalk, the desirable part for cooking, you can hill
them, or transplant them into a 6" deep hole.  Wait till they're about
pencil thick to transplant, they'll do better.  A tool called a dibble is
designed for making these deep narrow holes, but depending on your soil you
can use a bulb tool or even a bamboo stake or similar.
Enjoy young leeks same as you would spring onions--in salad, soup, stirfry.
