Janet, the hilling will blanch the leek. You want to hill them as they
grow. Most of the gardeners that I knew that grew them targeted to get
about 1 foot of bleached root. (that's also the rason that you will find
dirt in the leek if you cut it length-wise to steam).
Just add the dirt as they grow. Also, they are heavy feeders so you may
want to mix good compost with the dirt you are using.
