There was a suggestion on the square foot list that worked well for me last
year. When you plant leeks dig out a square 9" deep and put in lots of compost.
Transplant your seedling in (or you can start from seed). As the leek grows, add
compost, 3" at a time until the leek has grown out of the square. This will
give you strong, white leeks.
A neighbor told me they put newspaper around the stalk to bleach them. The first
method worked really well for me.
