your seedlings grow about 4 inches or so, then transplant into a sterile pot."

As far as how long until a seedling goes out into the garden, it depends on
the type of veggie.  I plan on setting tomatoes out at about 6-7 weeks;
peppers 7-9 weeks.  Lettuce goes out after 3 or 4 weeks.  You could probably
leave a plant in a container for too long, causing it to be root-bound, and
less vigorous than it could be.  I don't think you could set a seedling out
that is too small.  (?)  

Probably more important than how old the seedling is, is the weather when you
set the seedlings out.  Some veggies can stand light frosts (lettuce), others
can't (peppers).  

I've been starting seed indoors for about 10 years.  I wouldn't say I'm
particularly good at it, but I always have enough plants.
