Growing sprouts

I am considering growing Radish and Cabbage to be eaten when young. I have a few questions:
 
1. How big should I let them get before I harvest them?
2. Will they re-grow(cut and come again)?
3. I read somewhere that Sunflower sprouts are also edible. Is this true?
