Well, I don't know about 'should' but I tend to let mine grow until the
seedleaves are fully extended, and starting to green up.

No - as you're eating the entire little plant. If you want cut and
come again you're better off with mixed non-hearting lettuce seed or
chinese leaves, in soil or a nydroponic system.

i've eaten them, and I'm still here. They taste very like baby carrots
but are horribly bitter if you let them get green. I tend to take
bitter=bad for me, so didn't eat the green ones at all.
