We grow a lot of greens for sale during the winter months and Swiss
Chard is hard to beat for consistent results, especially given a little
protection. If the stock is variable as most are keep the seedlings with
pink around the stems, they give the best dark greeb glossy leaves and
pure white midribs. You may be able to get large polystyrene boxes from
your fishmonger to grow them in, they need to be quite deep for the
taproots.
For stirfry work have a look at the range of oriental greens e.g.
pakchoi, chopsuey, mibuna,mizuna
