Brussel Sprouts are ready when they are still tight and hard. You don't
want to leave them until they get loose.
They are not bitter or inedible before the first frost, just a bit less
tasty. And no,
you don't pull them out after the first frost. Sprouts are tough as old
boots and do not die in the cold. They may look sad, but they will
withstand many degrees of frost. Mine were frosted to minus 10 degrees C
last winter.
They go a bit limp looking but they are not dead.
If you keep harvesting the sprouts and removing the dead leaves from the
bottom up, you should, depending on the variety you are growing, be able to
harvest them for several weeks. Sprouts form at the junction of a leaf and
the stem, so removing leaves helps in the formation of the sprouts. You can
even eat the sprout tops like cabbage. Remove the earwigs and caterpillars
first though. Unless you need the extra protein. ;)
I have some that are just ready and others which will not be ready until
around December. If you choose the right varieties you can have Sprouts
from September to March.
