My Southern NH tomatillo area is very prolific this year from only 4
plants....probably 200-300 tomatillos .....a slight garden excess! The
largest tomatillo was about 5 cm ..after that they turned yellow w/ a
purple discoloration & unattractive. The smaller ones were much better
for the tomatillo & celery salsa recipe I recently tried.
I usually add the tomatillos to my regular tomato based salsa for added
flavor.
You can fine shred them and freezer pack them for later batches of salsa
assembled when the green garden is but a memory under the snow.
