We never have gotten Anaheims to turn red on the plant, but if you hang
them to dry in the sun, they turn a beautiful red. Take them in at night
unless your climate is dry. Once they turn red, we finish the drying in
a dehydrator since it is so humid here that they will mold before they
finish drying. Once dry we like to powder them in a blender and they are
great sprinkled on eggs, potatoe salad, and meat dishes. Just be very
careful not to breath the dust when blending them.
