Here in zone 4/5, I don't cut them back until spring. I do mulch
them with several inches of straw. Every so often after a mild
winter, some of the stems will still be alive. And every so often
after a severe winter, the whole plant may die. But they're
inexpensive to replace and as you note, they fill in very quickly.
