Hi Allan,
Fortunately Am. albus is very easy-going and it doesn't
matter if the offsets snap off, they'll yield plants again next
season.
Generally it is best to try and keep the offsets on the
mother tuber untill it is replanted. Then separate the offsets but not if they
resist.
