Tom,
It just occurred to me that the person who did the original jicama research
in the 70's is down your way. He's Rick Gomez at USDA. The phone numbers I
have for him are 202.401.5290 and 202.720.2471. I'm not sure whether one is
better than the other or not. I've not called him since last year.
