In addition to the excellent resources mentioned on the Horticulture Therapy Association website (including a textbook), you might want to investigate the Healing Landscapes website at http://www.healinglandscapes.org
There is a bibliography available there, as well as a list of designers and axamples of therapeutic gardens.
