Onion Pomegranate Salad
2 large red onions, halved and sliced
1 tsp. Salt
¼ cup red wine vinegar
1-cup pomegranate seeds
¼ cup fresh pomegranate juice
Ø In a colander, toss the onion with salt. Allow to stand for 20 minutes. Drain thoroughly and pat dry with paper towels.
Ø In a salad bowl, combine the onion, vinegar, pomegranate seeds, juice, and a pinch more salt if desired. Cover and chill for 2-4 hours. Serves six.
