I knew I'd leave out something! Sometimes I add tomatillos, too, but I just parboil mine. Pan roasting sounds much better.

This is the best salsa I've ever eaten!


the recipe:

   * pan roast 2-3 tomatillos (halved), one serrano, for 4 minutes.
   * foodprocess the tomatillo/serrano plus some garlic (or if you can
     roast the garlic with the other stuff if you like) til smooth
   * add one can fireroasted diced tomatos to food processor.  pulse
     (tomatoes should still be kinda chunky)
   * chop 1/2 white onion.  rinse in colander and add to salsa.
   * squeeze in 1.5 limes.
   * add some cilantro and salt.
