Thanks to all for the salsa recipes. I personally don't eat the stuff as
hot spices and my system don't get along. My Dh loves the stuff and I am
constantly buying it so I thought I would try to make some since I have
plenty of supplies from the garden. Thinking I may try a batch of
each....

This is the best salsa I've ever eaten!
the recipe:
* pan roast 2-3 tomatillos (halved), one serrano, for 4 minutes.
* foodprocess the tomatillo/serrano plus some garlic (or if you can
roast the garlic with the other stuff if you like) til smooth
* add one can fireroasted diced tomatos to food processor. pulse
(tomatoes should still be kinda chunky)
* chop 1/2 white onion. rinse in colander and add to salsa.
* squeeze in 1.5 limes.
* add some cilantro and salt.
done.
