Mutton is the meat of a mature sheep, while lamb, I think, comes from younger animals.

What's the difference between mutton and lamb?

Don't much care for most beef, either; too bland, like cardboard.
Favorite red meats are lamb, goat [cabrito], and mutton [which is
nearly impossible to find].
