Here goes:
Lettuce Wine
3 lbs lettuce
1 lb wheat
thinly peeled rind (1 orange and 1 lemon)
5 pints water
juice 1 orange and 1 lemon
8 oz raisins, chopped
1/2 oz pectic enzyme
1 Campden tablet
3 pints syrup, gravity 300
1 yeast nutrient tablet
All-purpose wine yeast starter
cooled, boiled water
Wash and chop lettuce; discard the stalks. Put in a saucepan with the
wheat, rinds and water, bring to the boil and simmer for 15 minutes.
Strain into a polythene pail and, when cool, stir in the fruit juice,
chopped raisins, pectic enzyme and Campden tablet, crushed and dissolved in
a little water. Allow to stand for 24 hours.
Add the yeast nutrient tablet, starter and half the syrup, stir well and
cover. Allow to ferment for 7 days in warm place, stirring each day and
then replacing lid.
Strain into a 1-gallon fermentation jar, add the remaining syrup, top up to
the 1-gallon mark with cooled, boiled water and then fit the fermentation
lock. Ferment to completion in a warm place and then bung. Siphon into
bottles after about 6 months.

Glass Fermentation Jar: Get the ones that hold just over a gallon. You
will need two of these for each gallon of wine you make. Another source
says that gallon-size glass bottles may be had from most chemists or
wholesale grocers. I imagine you can find a source on the web.
