Two hour class question

I have been asked to give two hour classes at the local Y. I am going to be teaching “An Introduction To Vegetable Gardening.”  I am planning to show the PAR video, speak a bit about the program, give out handouts and free seeds. I am planning to do a hands on demonstration to show people how to plant the seeds and small plant. I am going with small tomato plants, lettuce and radish. This will run for four Saturdays in March.

I am not sure this will take two hours. Does anyone on the list have suggestions for what kinds of things I should include that I may be forgetting? I will be working with the general public, teen mothers and small children at different times. I want them to leave feeling that the container they plant will flourish (and have it do so) as well as encouraging them to try to grow additional items both for themselves and the local pantries.

Our last frost free date is May 15th so they will be growing these inside for a few weeks after leaving the class. I am going with cool weather tomatoes such as Oregon Springs so they can sit them outside during the daylight hours. I know many of the participates will be low income and grow lights will be out of the question.
