Well I am not going to aswer that directy but I usually recommend three books whenI give herb talks.
1) Ortho All About Herbs: gives lots of info on using for cooking, health, teas, growing and lots of pretty pictures of gardens and herns.  Maggie Oster is the author and doesn't mentio any chemicals, for all that Ortho is  on the cover. About 70 herbs are discussed individually.

2) The Encyclopedia of Herbs by Deni Bown.  The second edition of htis is much more organized than the first, but gives pictures for each herb and the commercial and historical uses etc as well as growing conditions.  Contains problably 2000 herbs (no not a typo).

3) The Big Book of Herbs - Tucker and DeBaggio , both big names in the herb field.  Gives foreign name of  the herb, chemical constitiuents and describes different varieities.  Not a bieginner book and no coloured pictures, but a worthwhile book for the serious gardener.
