I read an article (anecdotal, I know) written by a woman who said she had
sworn off bread because it made her feel unwelll. She went to France,
resolved to resist the bread there, but couldn't help herself. She was
amazed and delighted to find that she had no ill effects with the bread in
France.

I believe the difference is that most - if not all - bread in America is
made with genetically modified wheat, which has a different chromosome
chain than unmodified wheat. I think some individuals are more sensitive
than others to the unnatural chromosome chain, which would explain the
recent outbreak of gluten intolerance. The wheat in Europe is not
genetically modified.
