In addition to all the other suggestions you could always try soil
amendments:
a lot of rock dusts (siltation pond fines from rock quarries), biochar,
greensand, rock or colloidal phosphate
and granulated seaweed. These always improve the flavor of vegetables.
Those places in Italy, Sicily
and locations with volcanoes and glacial soil where there is a lot of
farming are noted for the excellent flavor of their produce.
It works. I have tried it on my land.

The nafex list at ibiblio is a great place to ask for advice about plant
varieties and cultural information.
