Re: Sweet Potato Vines


Hi Bruce,

I've grown the ornamental varieties Marguerite, Blackie and Ace of Spades all in containers. The last two produced red skinned tubers that looked rather nice in a "harvest cornucopia" display at our nursery. The Marguerite grew very large tubers around 6-8" long and about 4" in diameter. They were light skinned.
My wife cooked them up for our Thanksgiving and they were edible. Perhaps they weren't cooked properly but as Betty is an awesome cook (measured by my girth) I wouldn't lay the blame there. It could be they require special steps for preparation. We thought they combined all the unfortunate elements of turnips and squash together. Some bits were hard but others were mushy, even though prepared the same. They were very starchy- I wonder if they need to sit for awhile to allow starches to convert to sugar- sort of like Delicious apples?


Anyway, Bruce, edible yes, tasty yes but not a particularly good taste.
