This may be of interest. I also remember a group in Europe working on a 
similar project and I will try to find out if it is relevant to your request re 
gardens.

This is a site where apparently there are some 5,444 
digitized works in Latin that are accessible as PDF files.  At the bottom 
of the main page you can click on a letter of the alphabet to see the list 
of available works by authors whose surnames begin with that letter.  There 
are many botanical works included, as well as works in many other areas of 
interest.
