I'd mulch to the top of the barrels, and push them together with some
sort of insulation around the outside - bags of mulch or potting soil
for next year work really well.

I wouldn't cut them back - might stimulate new growth in your next warm
spell.  And your garage may not stay cold enough to keep them dormant
during warm periods.

Keeping them well watered during cold spells will also help insulate the
roots.

Just a couple of thoughts from south of you.....
