Re: Cutting Asparagus?


White asparagus can be harvested by underground cuttings, but a more
effective way is to blanch it using a cloche -- or a clay pot turned upside
down over the spears. This will occlude all light as the asparagus breaks
ground, thus blanching the spears and keeping them white and tender.

I prefer the green, thick spears because they seem to have more flavor. The
white spears are a bit more tender and still delicious. A nice change
sometimes and great to serve to people who've never seen them before.
