Re: Cutting Asparagus?


White asparagus is grown covered (like endive) so that it won't produce chlorophyll (sp?) and turn green (at least I think it's chlorophyll - it's some part of the photosynthesis process - where's a good botany teacher when you need one?).  You can use any variety.  It's supposedly a delicacy, but I'm not particularly fond of it.

Asparagus" which is apparently very popular on the continent (Europe),
does anyone have any information on this?


I think white asparagus is simply the spears under the soil, i.e. not exposed to light.  I don't know if you plant a different variety.
