Hi Chris, This happened to me when I was living in Arlington, Virginia. I recall the lettuce being quite bitter when it reached the stage that the milky substance oozed. I didn't like the bitter flavor so I let it go to seed (so I could collect for the next season). Tasting it didn't bother me so if you like bitter, I guess its OK to eat.
