Hi,
That milkey white substance indicates that aphids or leafhoppers have
spread disease to your lettuce. I am writing this from the top of my head
and can't remember the name of the disease.
I know this because I get this problem around June in my garden. The
lettuce is very pretty, healthy looking, but when you break the lettuce to
use in salad, there is a white sapey substance oozing from the lettuce,
espcially around the ribs. When I first noticed this, I did some research.
When you tear the lettuce, touch the leaves to one another, I hope this
makes sense. If a long stringy white strand appears you have a bacterial
disease spread by aphids or leafhoppers.
To repeat, since writing this from top of my head can't remember name of
disease. If you wish I'll look it up.
