Uh, no. As mentionned before, the botanical name of lettuce, "Lactuca sativa",
already contains the term "milk" (in latin). The species is named after this
milky white substance! You can see it even in fine head lettuce or even better
in cos (the first class, "marketable" one). Yes, the older the lettuce,
the thicker the sap, and some bitter taste will get stronger. But be aware
that this bitterness is just the taste that makes lettuce taste -- if there
is not too much of it.
