Soil Problems?

I'm a "Green" Square Footer and I think I messed up (although I think it's
correctable). I built three 4'X4'X12" tall raised beds. I filled each bed
with 4 c.f. of peat moss, 2 c.f. of vermiculite and 8 bags of compost
manure (320 lbs.). One week later (which was about 3 weeks ago) I planted
carrots, radishes, lettuce, and onions from seed. They are all coming up
and looking okay. I also bought cauliflower, cabbage, tomatoes, and bell
peppers and transplanted them. I have not added any fertilizer yet other
than a couple of cups of 8-8-8 I added to each soil mixture when I prepared
the soil.
My problem is that I can't really tell my transplants are growing any and
my tomatoes are looking horribly. They are turning yellow and one has
almost completely turned brown and died. I have not done a soil test, but
I think my soil pH is off from all the compost manure and the nitrogen is
probably elevated. Another factor is that the weather has been a little
cool lately (50's at night and 60's or less daily). I have not been
overwatering, although is has rained some.
Am I guessing right, or am I over-anxious? If I'm right, what can I add to
balance it out and how much? What kind of fertilizer should I use in this
situation? Or am I totally off base and thinking I'm smarter than I really
am?
Please help! I don't think its too late to save my plants, but I need to
act fast!
I appreciate any advice/suggestions.
