My husband just constructed some raised beds last weekend. He used cedar,
and then coated them on all sides with several coats of a mixture of
linseed oil and mineral spirits (50/50 proportion). They look GREAT,
almost like fine furniture. We'll see how they hold up in the garden.
Linseed oil is a product of the flax plant, so it's safe. The mineral
spirits are necessary for making the linseed oil spreadable, and I
believe that they eventually evaporate. So this should be a safe coating
for the wood.
