Garden update from Margaret R, in Maryland with her brand new garden!!
Help!! I'm drowning in tomatoes. We harvested over 20lbs. this week
alone!! and there's a lot more coming. So far our 24 plants have produced
about 60 - 70lbs. We've frozen 8(so far) half-gallon bags, eaten a LOT, and
given away a couple of dozen, too.
The cukes, planted enough for a 4ft trellis, are doing well even if I
never got aroiund to trellising them..they like being on the mulch..silly
things. Harvested about a dozen..so far.
We planted 12 different colors of Peppers and they are starting to turn
...have ony picked 4 so far, but about another dozen soon.
We planted 5 Zuchinni, and it's going crazy..lots to shred and freeze for
future use(meatloaf, spaghetti sauce, breads/muffins)..and still have plenty
for fresh uses... and to give away.
The eggplant is doing well..we planted 2 Ichiban, and have harvested about
7-8 nice ones. The garlic, beets,potatoes, and carrots are growing well but
no harvest as yet.
The herbs are in 7th heaven of course!!
Bonus recipe:
This recipe is a favorite of ours, at this time of year especially when we
have our OWN freshly harvested tomatoes, but can be made with store bought.
If you want you can do this without the chicken and serve it as a side
dish...it goes VERY well with fish!!
Fresh and Fast Pasta
1 Onion (medium dice)
2 cloves minced Garlic
4 Tomatoes (chopped and seeded)
1/4 c Balsamic Vinegar
1/2 c Wine (white or blush) may substitue Chicken Broth if desired
1-1/2 c cooked chopped chicken (optional)
3c hot, cooked Angel Hair (very thin spaghetti)
Grated Parmesan Cheese
Sauté the Onion in PAM until translucent, add the Garlic, Tomatoes, Wine(or
broth) and Vinegar. If you want to make this a main dish add the Chicken now
as well.
Sauté over medium heat, stirring frequently, 3-5 minutes or until the
tomatoes are heated through and start to soften. Toss with hot Angel Hair
pasta, and top with Grated cheese to taste.
Serves 3 - 4
