Olin,
The recipe calling for a peck is for salsa and the one calling for 10 quarts
is for spaghetti sauce.

Average weight of a bushel of commercial tomatoes = 53 pounds per bushel or
13 1/4 lbs/peck or 16.56 pounds per 10 dry quarts.
A peck is a unit of volume, not of weight, so the weight of a peck of
tomatoes would vary with the size of the tomatoes, i.e., a peck of cherry
tomatoes would weigh quite a bit more than a peck of beefsteaks. A peck of
very juicy tomatoes would also weigh more.
Seems a recipe calling for 1/4 bushel or 1/3 bushel of tomatoes is a pretty
fair sized recipe. Would we be out of order to ask what you are making?
Olin
