Tristan, it sounds to me like your peppers are getting too much water... they
really like to be one shade away from wilting, I've found.  Leave off the
watering for a while (even wait until a little wilt shows) and you may begin
to get better results.  Good luck, often once peppers have been overwatered
they're dead for sure!  I lost over 30 plants this spring with all our unusual
rain.  Fortunately the ones that survived are now thriving in the Texas sun.

I am also in need of advise for something else.  I am growing misc.
varieties of peppers and suddenly the bottom leaves started turning
yellow.  I had heard to add iron w/chelate to the soil.  I found this in
granular form and it says on the container that it is "used to correct
Chlorosis (yellowing foliage) caused by deficiency of Iron, Zinc,
Magnesium and Sulfur".  All of these things are included in this
product.  I added this exactly as instructed 1 1/2 teaspoon per plant,
mixed in soil and watered.  Now 2 of the plants have lost 80% of their
leaves (even ones that weren't yellow before application).  What can I
do to save these plants?  I love peppers and don't want to lose them.
