Just nip off any new fruit that develops and leave the vines alone. You are
correct in thinking that any new fruit formed now probably won't ripen
enough. Furthermore, you want these plants to put everything they have into
developing and ripening the winter squashes you have now.
Also, you can pinch off the "fuzzy" new growth on the vines to keep the vines
from growing any further.
