There are a lot of advantages to having the beds level on the top. If they
are not level you may have trouble with the water run off and erosion. The
beds will be more pleasing to the eye if they are level. With a little
effort and some cost you can build beds that will be a joy to garden in for
years.
I also put my beds in an area that was not flat. I like my beds to be about
24" high, so some of the beds are 24" on the high end and as much as 32" on
the low end. We built them out of 3"X8" incense cedar that was available
from the local pencil lumber mill. I have seven beds that are 4'X6' and
think that this is the only way to grow vegetables.
