Drea, 

I have had great luck with basil at 1/sqft.  I planted Sweet Basil and
Siam Queen and they grew so tall that even with regular picking for
cooking and also to dry for over-winter, I still had to use a weed-eater
to chop it down at end of season.  The Sweet Basil reached 3ft tall and
was still very flavorful!  I haven't tried water melons, but they seem
easy to grow.
